Marinated and Grilled Pork Chops

The secret to grilling boneless pork chops is an easy 2 step process. Follow these simple guidelines and never have dry pork chops again! First, marinate, marinate, marinate. Shoot for 6-8 hours. Thirty minutes before grilling time won’t do it. Second, cooking time for boneless pork chops is super short. 8-10 minutes maximum! This all depends on your particular grill, how hot it heats, how far the grates are from heat source etc. etc. I have a very hot grill, even on medium heat. I generally cook boneless pork chops about 4-5 minutes on one side and then 3-4 on … Continue reading

Cocktail Meatballs

I don’t know about you, but I’m not a big fan of potlucks. I never really was….you do not really know who made the food, if their kitchen is clean, do they wash hands frequently etc. etc. Then, when food issues came into play, I had to be careful about what I could pick up and eat. In a way, that was nice because I’d have good excuse to not eat something at a potluck if I didn’t really feel like eating it. So, if I go to a potluck, I often bring more than one thing. And I like … Continue reading

How about a sandwich meal?  Simple and not very time consuming at all, the crockpot is your friend for this recipe.  Enter…barbeque shredded pork.    Did you know there is a secret to cooking meat in the crockpot?  Not only should you trim any fat off, you should brown the meat or broil it first.  I have always trimmed off fat, but since browning or broiling the meat, the meals have turned out even that much better.  It only takes about 5 minutes.  I have heard people state they do not care for cooking in the crockpot because they do not … Continue reading

Pork Chop Suey + Coconut Aminos Explanation/Product Review

I cook a lot of stir fry meals.  I kind of always did, but probably a bit more now.  As long as you use a safe sauce or make your own, they are usually a naturally allergy friendly meal when served over brown rice or quinoa.   This “Pork Chop Suey” recipe does not make for a pretty picture, but does make a good meal.  I used coconut aminos in place of the soy sauce and then it was free of the top eight food allergens.  Coconut aminos are a great substitute for soy sauce or Worcestershire sauce.  It tastes similar to … Continue reading

Sloppy Joes With Real Vegetables

Have you seen those commercials on TV?  The ones where a little girl is dressed up as a sandwich (sloppy joe) costume and she is in a school play?  It’s a play about vegetables and she “belongs” in the play because that particular sloppy joe mix has vegetables in it.  Well, I beg to differ, but I highly doubt that can qualify as a serving of vegetables.  Especially when you take into consideration all the sodium and high fructose corn syrup that is most likely in the canned good. I’m just saying.   And let’s not forget that a lot of canned … Continue reading
