Creamy Tomato Soup – Gluten, Dairy, Egg and Soy Free

Oh those days of long ago!  Days when I would open a can of condensed tomato soup and crumble in an entire tube of Ritz crackers. Those long ago days are rarely missed anymore, but the memories linger as many memories are formed around food. Today’s recipe for tomato soup is not really reminiscent of those red and white cans of tomato soup. This is definitely a grown up version of tomato soup! You will never miss the gluten, dairy, eggs or soy. Nope! This soup is still satisfying, just a little more sophisticated. Adapted from this cookbook (non-affliate). Also … Continue reading

Three Bean Chili

I’m a sucker for soups. I love cooking them. Most soups require some pre-cooking the meat, or chopping vegetables or both. Most of the time I enjoy that. Sometimes I just want to open cans and dump them in a big pot. That is what today’s recipe is (mostly) like-fast, easy and tasty. This recipe makes a large batch. So I froze the leftovers in individual serving sizes to take out for lunch at a later time. Make some gluten free pasta, like penne or rotini, and serve the soup over that if you wish. It’s good either way, but … Continue reading

Make Your Own Can Of Condensed Tomato Soup

Fall is knocking on our door and I’m ready to start making soups and stews again. In fact I made this stew last night and it was good. If you haven’t tried it yet, you should. One of my favorite soup recipes from childhood is a chili recipe that requires a can of condensed tomato soup. I started making my own condensed version about 4 years ago. I took these pictures back in 2012 and am just now getting around to sharing it. You’ll need oil, starch, spices, milk (dairy free or not), and tomato paste. Heat oil on stove … Continue reading
