Easy and Mild Chicken Rice and Beans

Chicken. Rice. Beans. These are three things I like to keep in the house for a quick meal. Often that quick meal is Jerk Chicken Rice and Beans. Oven Roasted Chicken Thighs

We love this simple entrée.  Chicken thighs spiced just so and roasted to perfection; it is pure comfort food.    I find that using fresh, never frozen chicken thighs works best simply because they roast so much faster.  Even after defrosting 24 hours, it always seems to take longer to reach internal temp of 180 F. when I use previously frozen thighs. These chicken thighs are never dry, always juicy.  Fast enough for a weeknight meal and elegant enough for company, you will love this way to prepare chicken. Southwest Grilled Chicken

I grill well into autumn.  And I grill a lot of chicken.  I have about three chicken marinades that I rotate through and they are getting a little old.  So, I set out to find a new and different marinade to liven up our grilled chicken.   I adapted today’s marinade recipe from here.  It has a Southwestern flair to it so I renamed it Southwest Grilled Chicken.  If you like lime, you’ll love this.  If you are not crazy about lime, you may not like this so much. I love cooking summer food!  AKA…the grill!  What is better and easier than firing up the grill for a simple meal of protein and vegetables!?   So simple and fast…great for a hot day when you do not want to heat up the kitchen or for a day at the pool and not much time in the evening!   Grilling chicken is not hard.  It only takes a little forethought in making a marinade.  Granted, you don’t have to marinate chicken, but it is oh…so….good….if you do! Perdue Simply Smart Gluten Free Chicken Tenders – Product Review

Look at what I found at the grocery store!  Gluten free chicken tenders by Perdue.  They are called Simply Smart.  Not only that, but they are milk and egg free too.  That is nearly unheard of in processed food which is one of the reasons why I almost never buy pre-packaged processed food.   But I found this at a discounted price because it was about to reach it’s sell by date.  (I found it strange that these were in the fresh meat section and not the frozen section).  So I bought a package for $3.89, regularly priced $5.49, and thought I’d … Continue reading

Sweet and Savory Beef Bean Medley

This beef and bean dish may not look like much, but it is really good.  Sweet and savory combined, I rank this with comfort food.    Other great things about this meal:  it’s a slow cooker meal and it makes a lot.  I almost always freeze about half.  Then some night when I do not feel like cooking I can simply defrost, warm and enjoy.
