Nutty Chocolate Pudding

Who wants a chocolate dessert that is creamy, satisfying and allergy friendly? This quick-to-make dessert is sure to please even the finickiest of eaters and is gluten free, egg free, milk free, soy free, and corn free. Please do not be scared off by the avocado in it.  You really can’t taste it, but it adds such creaminess and richness!  Avocados are also a good source of good-for-you fats.  Yes, fat is not the enemy here! Make your own cashew butter (see how here) to keep the dessert cleaner; less sugar and additives! Enjoy this right away or chill it.  … Continue reading

Smoky Black Bean Dip

I love raw veggies and hummus and vegetable dips!  There is always something in the fridge to dip into. Now it’s time for a new twist! Introducing Smoky Black Bean Dip.  It’s just like hummus, only hummus is technically only made with chickpeas. This is really good with raw veggies and even tortilla chips.  Sometimes it comes out looking brown and sometimes it almost looks purple…which is fun and makes it more desirable to kids. Mostly Vegetable Smoothie

It’s been awhile since I’ve posted anything.  I’ve just been making the same ole things over and over. But with the advent of spring, warmer temps, budding trees, I’ve felt the desire to start making new things in the kitchen again. So, with that, I give you this mostly vegetable smoothie. It’s a perfect way to “detox” from all the heavy winter foods. This is one of those recipes where I just dumped ingredients in and took good notes.  And it turned out great! You need a high speed blender to get a really smooth texture for this surprisingly delicious … Continue reading

Creamy Tomato Soup – Gluten, Dairy, Egg and Soy Free

Oh those days of long ago!  Days when I would open a can of condensed tomato soup and crumble in an entire tube of Ritz crackers. Those long ago days are rarely missed anymore, but the memories linger as many memories are formed around food. Today’s recipe for tomato soup is not really reminiscent of those red and white cans of tomato soup. This is definitely a grown up version of tomato soup! You will never miss the gluten, dairy, eggs or soy. Nope! This soup is still satisfying, just a little more sophisticated. Adapted from this cookbook (non-affliate). Also … Continue reading

Unusual Salad Dressing

I’m at a loss for words when it comes to naming this salad dressing. Maybe you all can suggest a good name for it? For now I’m settling on “unusual salad dressing.” Why? Because it is actually unusual tasting; in my book anyway. And oddly, it is kiddo’s VERY FAVORITE salad dressing of all time! Seriously, put on this homemade ranch dressing, or this Russian dressing, or bottled Italian dressing and we get very little salad in little person. However, if I make this one….down the hatchet it goes. Even seconds are sometimes requested. I’ve made this multiple ways using … Continue reading

Chocolate Date Balls

Chocolate! Give me chocolate! Who doesn’t love a chocolate treat now and then? These raw chocolate date balls are the perfect way to enjoy chocolate. No added sugar! All sweetness comes from dates. Medjool dates work best because they are so, so naturally sweet and creamy! Regular dates work also! No matter what kind of date you purchase, they can be either hard to find or expensive. So I usually opt to make these around Christmas time. They may not be a “typical” holiday treat, but they do work wonderfully at this time. To me, they are guilt free indulgence! … Continue reading

Cashew and Coconut Raw Cookie Balls

You know how it goes…you want a snack…don’t have one on hand. Sigh. You don’t want to measure a bunch of ingredients, nor do you want to take the time to bake them. What can you do? Make these raw cookie balls! In mere minutes. Just a teeny tiny bit of work and next thing you know….. You’ll be noshing on a treat so good you can’t stop with just one. Seriously….these are dangerous. Some cashew butter (try homemade!), coconut, and a few other simple ingredients and next thing you know, you’ve satisfied your sweet tooth. Also shared at Allergy … Continue reading

Spinach and Bean Burritos

I am excited to share this recipe with you today as I don’t post new recipes as much as I used to. This is an old recipe that is coming out of retirement and getting a gluten free, dairy free makeover. (Originally, it came from some magazine…I have it cut out and taped to an index card). Years ago, I made this frequently and in my house it actually goes by a different name. It’s named after a kid who as an older baby/toddler would eat this like there was no tomorrow. Seriously, it was hilarious seeing a 13 month … Continue reading

Pumpkin and Cranberry Granola

Making your own food is part of the gluten free, dairy free, (or allergy free) lifestyle. It just comes with territory and everyone is better off because of it. Homemade is always better! This is so true when it comes to granola; you can control the amount of oil and sugar used. So, in the spirit of autumn and all things pumpkin, I created a Pumpkin and Cranberry Granola recipe for Food Allergy & Anaphylaxis Connection Team (FAACT). (I was not compensated). You can find the recipe by clicking here. And if you love granola as much as I do, … Continue reading

Make Your Own Almond Butter

Making your own almond butter is as simple as 1-2-3! Seriously, this isn’t even a recipe. Throw some almonds in a food processor, turn it on, and in about 5 minutes you have almond butter. Smooth, creamy, and only one ingredient. No oils, no sweeteners, (none needed, really), good for you almond butter. I had been buying oven roasted almonds at Aldi assuming they were cheapest there. It turns out that Trader Joe’s oven roasted almonds are 8 cents an ounce cheaper than Aldi. Go figure. Then I checked Sam’s Club and, yes, per ounce, they are 5 cents cheaper … Continue reading
