Sweet Winter Squash

Ingredients:

  • 2 medium sized acorn or spaghetti squash
  • 4 T. dried cranberries
  • 4 T. coconut sugar
  • 2 T. dairy and soy free margarine

Directions:

  1. Preheat oven to 375 degrees.
  2. Wash squash and cut in half. Scoop out seeds. (You will have 4 halves).
  3. Place in pan with cut side up.
  4. In each half, place 1 T. cranberries and 1 T. coconut sugar.
  5. On top of cranberries and sugar, place 1/2 T. dairy and soy free margarine.
  6. Bake for one hour.
  7. To serve, place one squash half on plate with the rest of your meal and scoop out flesh and cranberries to eat.
