Grilled Pineapple

Ingredients:

  • one pineapple
  • 1 T. dairy and soy free “butter” or other allowable butter
  • 1/4 cup coconut sugar

Directions:

  1. Cut and core the pineapple and cut into 1 inch by 1 inch spears.
  2. Melt butter of choice in microwave.
  3. Stir in coconut sugar.
  4. Spread paste onto one side of pineapple spears.
  5. Place spears on clean grill and cook 20 minutes on medium low heat.  Use a pastry brush to spread around paste as it melts.
  6. Turn over spears and brush with remaining paste.  Once it is melted, use pastry brush to spread around paste.
  7. Cook 20 minutes.
  8. Serve warm.
