Grain Free Breakfast Cookies

Ingredients:

  • 1/3 cup hemp hearts
  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup blanched almond flour
  • 1/4 cup coconut sugar
  • 1 T. coconut flour
  • 1 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/4 tsp. cloves
  • 1/4 tsp. baking powder
  • 1/8 tsp. salt
  • 1/3 cup chopped pecans
  • 1/4 cup coconut oil, melted
  • 3 eggs

Directions:

  1. Preheat oven to 350 degrees and line 2 cookie sheets with parchment paper.
  2. In a large bowl, combine everything except the eggs and oil.
  3. If you just melted the coconut oil and it is hot, let cool for a few minutes.
  4. Add oil to bowl and stir to combine.
  5. Add eggs to bowl, stir to combine, and let sit for 5 minutes.
  6. Using a spoon, scoop out batter and form cookie shape on parchment paper.
  7. Bake for 15 minutes and then remove to cooling rack.
