Chili Mac Bake

Ingredients:

  • 1 1/2 cups gluten free or regular elbow macaroni
  • 1 T. olive oil
  • 1 T. dried minced onion
  • 2 T. garbanzo bean flour or regular wheat flour
  • 1 cup rice milk or cow’s milk
  • 1/2 tsp. salt
  • 1/2 cup Daiya cheddar style shreds or regular cheddar cheese
  • 1 1/2 cups meat chili or vegan chili

Directions:

  1. Preheat oven to 375 degrees.
  2. Cook macaroni according to package directions.
  3. Heat olive oil in skillet over medium high.
  4. Add onion and cover pan with lid and cook for a few minutes.
  5. Add the flour and stir until well mixed.
  6. Turn heat to low, add milk and whisk until mixture thickens.
  7. Add salt. Remove from heat.
  8. In a large bowl, combine the sauce, chili, macaroni and 1/4 cup of the cheese.
  9. Spread into a 8 x 6 glass baking pan (or similar size).
  10. Sprinkle remaining 1/4 cup cheese over top.
  11. Bake about 30 minutes or until hot and bubbly.
