On to these cookies…..they are super low in sugar and have a good dose of healthy fat and protein so they could be served for breakfast guilt free! Perhaps an after school or evening snack?
If you are allergic to nuts or eggs, these are not for you…but they ARE gluten, dairy, soy, corn, and gum free! (Xanthan gum, silly…not chewing gum!). And there are hemp hearts in here…which I’m really starting to love!
We can call them KETO and Paleo too for followers of those diets. I like all things healthy!

Grain Free Breakfast Cookies
Ingredients:
- 1/3 cup hemp hearts
- 1/2 cup unsweetened shredded coconut
- 1/4 cup blanched almond flour
- 1/4 cup coconut sugar
- 1 T. coconut flour
- 1 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1/4 tsp. cloves
- 1/4 tsp. baking powder
- 1/8 tsp. salt
- 1/3 cup chopped pecans
- 1/4 cup coconut oil, melted
- 3 eggs
Directions:
- Preheat oven to 350 degrees and line 2 cookie sheets with parchment paper.
- In a large bowl, combine everything except the eggs and oil.
- If you just melted the coconut oil and it is hot, let cool for a few minutes.
- Add oil to bowl and stir to combine.
- Add eggs to bowl, stir to combine, and let sit for 5 minutes.
- Using a spoon, scoop out batter and form cookie shape on parchment paper.
- Bake for 15 minutes and then remove to cooling rack.
