Roasted Dill Carrots

Roasted Dill Carrots

Ingredients:

  • 2 cups baby carrots (or regular carrots cut into baby carrot size)
  • 1 T. olive oil
  • 1/2 tsp. dill weed

Directions:

  1. Preheat oven to 425 degrees.
  2. Toss carrots with olive oil.
  3. Place carrots in 9×13 pan.
  4. Roast for 15 minutes.
  5. Remove from oven and toss with dill weed.
  6. Return to oven and roast for 5 more minutes or until desired tenderness.
