Raw Broccoli Salad

Ingredients:

  • 1 lb. fresh broccoli
  • 1/2 cup shredded carrots
  • 1/3 cup golden raisins
  • 1/2 cup Mindful Mayo Original–this is soy, egg and milk free (or regular mayo)
  • 2 T. apple cider vinegar
  • 1 T. xylitol (or sugar)

Directions:

  1. Wash raw broccoli and cut into bit sized pieces.
  2. Place broccoli in salad bowl along with carrots and raisins.
  3. In a small food processor, combine Mindful Mayo, vinegar and xylitol.
  4. Pour over vegetables and refrigerate for several hours before serving.
