Grain Free Sandwich Rounds

I have been making these grain free sandwich rounds for quite some time now and figured it is high time I share the recipe! These are so easy and awesome tasting. In fact, they are actually kind of neutral tasting which is what makes them so fabulous! They go with anything! (Yes, they are yellow looking, but one bite and you’ll forget all about the color!) July is national ice cream month. So what better time to talk about a new dairy free ice cream cookbook!?!? (The author did not ask me to write this, I just chose too). Purple Pudding – Fun Finds Friday

It’s Friday and I have another Fun Find to share with you.   I call it Purple Pudding!  It’s a real treat around here.  I have been making it since December whenever avocados are on sale. Oven Roasted Chicken Thighs

We love this simple entrée.  Chicken thighs spiced just so and roasted to perfection; it is pure comfort food.    I find that using fresh, never frozen chicken thighs works best simply because they roast so much faster.  Even after defrosting 24 hours, it always seems to take longer to reach internal temp of 180 F. when I use previously frozen thighs. These chicken thighs are never dry, always juicy.  Fast enough for a weeknight meal and elegant enough for company, you will love this way to prepare chicken.
