Sweet Potatoes and Cranberries

Sweet Potatoes and Cranberries

Ingredients:

  • 2 cups peeled and cubed sweet potatoes
  • 2 T. allowable margarine/butter
  • 1 1/2 T. coconut sugar
  • 2 1/2 T. cranberries

Directions:

  1. Preheat oven to 450 degrees.
  2. Place sweet potatoes in small glass baking dish.
  3. Melt the margarine/butter of choice in microwave.
  4. Add the sugar to the melted margarine/butter and stir to combine.
  5. Pour over sweet potatoes and stir to coat.
  6. Bake for 20 minutes.
  7. Add cranberries and bake for an additional 5 minutes or until sweet potatoes are tender.
