Mississippi Mud Cookies

Ingredients:

  • 1 cup + 2 T. Bob’s Red Mill Gluten Free All Purpose Baking Flour
  • 1/4 tsp. xanthan gum
  • 1/3 cup sugar
  • 1/3 cup cocoa
  • 1/3 cup brown sugar
  • 1/4 tsp. baking soda
  • 1 tsp. baking powder
  • 1/8 tsp. salt
  • 1/2 T. lemon juice mixed with rice milk to equal 1/2 cup “buttermilk”
  • 2 1/2 T. applesauce

Directions:

  1. Line two cookie sheets with parchment paper.  Place in oven and preheat oven to 350 degrees F.
  2. In a large bowl whisk the first 8 ingredients together.
  3. Then mix the “buttermilk” and applesauce together.
  4. Pour liquid into dry ingredients and mix well, incorporating all the dry bits at bottom of the bowl.
  5. When oven is preheated take out the cookie sheets and place dough by spoonful onto warm cookie sheet.
  6. Bake for 10 minutes.
  7. Cool on cookie sheet for 2 minutes before removing to cooling rack.
