Mexican Bean Salsa
From: Adapted from Cheryl D. Thomas-Peters, More Choices
Ingredients:- 1 cup canned kidney beans, rinsed and drained
- 1 cup canned cannellini beans, rinsed and drained
- 3/4 cup frozen corn, thawed
- 1/4 cup chopped red pepper
- 1/2 cup chopped fresh tomatoes
- 1 can green chilies
- 2 T. dried minced onion
- 1 T. lemon juice
- 1/2 tsp. cumin
- 1/4 tsp. garlic powder
Directions:- Place all ingredients in a bowl. Cover and chill for about one hour.
