Vegetable Chili-Vegan Style

I love soups, stews and chili this time of year.  I love to make them and eat them.  Today I bring you a vegan chili that is so hearty.  This is a good way to introduce people to meatless soups or a good way to start trying them yourself.  You will not miss the meat.   I bring this recipe (slightly tweaked) to you from More Choices, Eat Well, Live Well by Cheryl D. Thomas-Peters, RD.  It is a decent cookbook. Serve with corn bread or biscuits and a green salad and you have a complete meal. Also shared on Gluten Free Friday and Wellness … Continue reading

Creamy Garlic Potato Soup With Vegan Options

I used to have a baked potato soup recipe that was so delicious!  It was loaded with heavy cream, butter and the like.  It was high calorie/fat so I limited myself to making it only once or twice a winter.   It was also a lot of work. So about two years ago, I set out to find a potato soup that could replace my old love.  I found it in a vegan cookbook.   It was simple and fast; not a lot of hard work.  It was creamy and full of garlic and onion which I adore.  It also used … Continue reading

White Bean Quesadillas

I have a new favorite mid-day meal.  I never tried quesadillas before, and I am not sure why, but with a creamy inside and crunchy outside, these make for a good, quick lunch.    I was flipping through a vegan cookbook of mine and found a recipe for white bean quesadillas.  The problem was the only ingredient I had on hand was the white beans.  So I had to come up with my own version and I think I stumbled upon something delicious the first time out the gate. This is easy to put together and if you do not use … Continue reading

Italian Bean Soup

Today’s soup is easy peasy!  Everything is put into the crockpot and then you can forget about it.  Another great thing about this soup is that it makes a huge batch.  So if you have a large family, you wouldn’t have to double it, and if you have a smaller family you can freeze half.  That is what I do.  I make a crockpot full and freeze half (it freezes well).  This is a great option for any mom.  On nights you are too tired or busy to cook, you can simply defrost this soup, add a salad and maybe bread and you … Continue reading

Mexican Bean Salsa

I try to make at least one meatless meal a week, if not twice.  It started as a way to keep the grocery bill down.  Buying beans is more affordable than meat.  However, I have really grown to enjoy my meatless meals and do so now out of desire rather than affordability.  Beans, such as black beans, navy beans, pinto beans, kidney beans etc. are so good for you as they are chuck full of protein and fiber.   The recipe brought to you today originated with Cheryl D. Thomas-Peters, RD in her More Choices book and I made a few tweaks here and there.  … Continue reading

Dairy, Soy, and Gluten Free Macaroni and Cheese

Every kid likes mac and cheese, right?  And let’s admit it folks…adults do too! And I admit I used to buy the boxed kind.  Only, I was too cheap back then to even spring for the Kraft!  I still try and watch the grocery bill.  Who doesn’t these days?  But cooking allergy free also means an increased grocery bill whether you like it or not.  I’m getting used to the higher prices of allergy free cooking.  All this to say the homemade macaroni and cheese is more expensive when you add in dairy free cheese and gluten free pasta, but it is … Continue reading
