Want the traditional Girl Scout Thin Mint Cookie flavor without the milk, gluten and soy? Check out these cookies! Lauren from Oatmeal With a Fork came up with these highly addictive, nearly identical, thin mint style cookies. What is even more awesome…they are grain free too! Yep! Don’t get freaked out by her choice of flour…I promise…you CAN NOT taste anything but super, delicious thin mint cookie flavor! Per her suggestion, I’ve been keeping them in the freezer and I find myself heading there several times a day. I really shouldn’t make these again. BUT I WILL! Her recipe is … Continue reading

Crunchy Chocolate Chocolate Chip Cookies

Who doesn’t love a chocolaty cookie? This cookie reminds me of Lucy’s cookies. It’s more a dry and crunchy cookie than an ooey-goey one. Yet somehow they are highly addictive. And perfect for dunking in coconut milk (or whatever you drink). This recipe was adapted from Erin McKenna’s Babycakes cookbook. Also shared at Allergy Free Wednesday. Gluten Free Wednesday. Crunchy Chocolate Chocolate Chip Cookies From: Adapted from Babycakes Cookbook Ingredients: 1 cup oil 1/4 cup xylitol 1/2 cup coconut sugar 1/2 tsp. liquid stevia 1/3 cup unsweetened applesauce 1/2 cup unsweetened cocoa powder 2 T. vanilla 1 tsp. salt 1 … Continue reading

Pumpkin Pie: Soy Free, Vegan and Gluten Free

I have several food memories from childhood. Most of them are fond such as using cookie cutters to cut out Christmas cookies and decorating them. Or the smell of homemade bread; warm cookies straight out of the oven after walking home from school. Some of them are not so fond. The one that sticks out for me and was a defining moment has to do with Thanksgiving and pumpkin pie. I always liked pumpkin pie, so when it came time to “order” my dessert at a turkey supper fundraiser I asked for pumpkin pie. (I was quite young, I’m thinking … Continue reading

Pumpkin Chai Spice Breakfast Bars

I saw the stats. The Grab and Go Breakfast Bars were a HUGE hit! I had mentioned I was working on a new flavor. Today, it’s yours…. Pumpkin Chai Breakfast Bars. Great autumn breakfast, although I would eat these any time of year. But now would be the time to stock up on canned pumpkin as it is always cheaper in the fall. These are not overly pumpkin for those of you who prefer a mild taste. The chai spices are not heavy either. You may want to check out the Grab and Go Breakfast Bars post for all the … Continue reading

Grab and Go Breakfast Bars – High Fiber and High Protein

We’ve had some early mornings around here; as in getting out the door by 6 o’clock A.M! So rather than eating nothing or eating poorly, I decided we needed a good protein breakfast bar. It had to: Be able to be made ahead of time. Freeze and thaw well. Taste well, but be low in sugar. Travel well, as in not be crumbly or fall apart all over the place. I also wanted something that would fill us up. Two things are needed for that: protein and fiber. This breakfast bar has both. Let’s look at a few of the … Continue reading

Black Bean Brownies – Gluten Free, Vegan and Guilt Free (Fun Finds Friday)

A brownie without eggs is difficult to make.  A brownie without eggs that is also gluten free that tastes good is even harder.  Sure, I’ve tried many recipes, from bloggers to well-known cookbook authors.  I tried many versions of my own with so-so results. I have not found one that I would make again and again. Until now. And I’m sure you have heard of people making brownies with black beans and it sounds strange, I know.  But this recipe is so, so much better than other black bean brownies you may have tasted.  I know that to be true … Continue reading

Chocolate Strawberry Tart

Chocolate or strawberries? Strawberries or chocolate? Which do you love better? Can’t choose? Well you don’t have too with today’s dessert! Hello Chocolate Strawberry Tart! This recipe is literally for anyone! It’s easily adaptable to any food needs. I made a gluten free tart (from The Allergen Free Baker’s Handbook), but you can make any tart crust you can eat. If you can eat store bought chocolate nut spread, go ahead and use that. Otherwise, do what I did and make your own milk free nut spread (making your own is healthier). I made this one. If you can’t eat … Continue reading
