Dairy Free, Egg Free, Soy Free Chicken Salad

Do you need a quick meal? How about a chicken salad sandwich?  It is fast, easy, and delicious when you use Earth Balance Mindful Mayo-Original (remember it is dairy, egg and soy free-see review.)  Use up leftover chicken, or you can quickly grill or even microwave chicken if you have to.  Or go ahead and use canned chicken.

Add the Mindful Mayo to cut up chicken, some crunchy celery, a little onion and just like that…a quick meal when you add a vegetable, salad or chips.  Place on gluten free bread if needed (not pictured here) and chow down a meal you used to be able to have.

Dairy Free, Egg Free, Soy Free Chicken Salad

Ingredients:

  • 1 1/2 cups chopped cooked chicken
  • 1/2 cup Earth Balance Mindful Mayo-Original (or regular mayo or Miracle Whip)
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 cup celery chopped (about 2 stalks)
  • 1 bunch green onions, chopped

Directions:

  1. Mix all ingredients and refrigerate.
  2. When ready to serve, place on allowable bread.

  1. I tried this chicken salad tonight since it was quick and easy. Just wanted to let you know, I found that adding sliced up pickles is a great addition. Also, I couldn’t find mayo that didn’t have eggs or soy, so I substituted with some mustard and a little bit of lemon juice and olive oil. Served with gluten-free pita chips. YUM!

    I am 28 years old living in Dallas. I just got diagnosed with EOE and am on a 6 food elimination diet (NO soy, wheat, fish, tree nuts, peanuts, dairy and egg) for at least a month and possibly a lifetime.

    Feeling a bit discouraged, I found hope in these recipes and not having to give up my favorite foods (like mac and cheese and ranch–will try those soon). Thank you!

    1. I wish you didn’t have to eliminate all those foods, but am glad you found “me.” After a while, it sort of becomes second nature. After the last four years, I’ve grown so used to eating this way, most days it doesn’t even phase me.
